Blondies
I always thought I was a pure chocoholic, but these blondies came pretty close to changing my mind. They're like a giant chocolate chip cookie!
Ingredients
- 1 1/3 cups (213g) all purpose flour
- 1 1/2 tsp baking powder
- 12 tbsp (1 1/2 sticks) unsalted butter
- 1 1/2 cups (300g) brown sugar
- 3/4 tsp table salt
- 1 1/2 tbsp pure vanilla extract
- 1 large egg, room temperature
- 3/4 cup (90g) toasted pecans, broken into bite sized pieces
- 3/4 cup (128g) semisweet chocolate chips
- 1/2 cup (85g) white chocolate chips

- 9” x 13” baking pan
Directions
- Set oven rack to middle position and preheat oven to 350°. Grease a 9” x 13” baking pan, line with parchment to form a sling, and grease parchment.
- In a medium bowl, whisk together flour and baking powder.
- In a medium-sized saucepan, melt the butter, sugar and salt together over medium heat: stir until smooth. Off heat, stir in the vanilla. Let mixture cool to room temperature.
- Add the egg and whisk until combined. Add the flour mixture and stir until just combined. Add in the pecans and chocolate chips and stir gently.
- Press the batter into the pan, patting into a thin even layer across the bottom of the pan.
- Bake for 18 to 24 minutes, until the blondies are set on the edge, the top is golden brown and the top is just beginning to crack. A toothpick inserted into the center should come out with a few crumbs.
- Transfer pan to a wire rack and let cool completely in the pan. When cool, use the sling to transfer to a cutting board. Cut into bars. Store in an airtight container at room temperature for up to 2 days.
Notes
- If you want more chocolate kick, replace the white chocolate chips with equal amounts chocolate chips.
- I prefer to break up my toasted pecans by hand - I find this results in less nut dust, and more evenly sized bits.
- If you use the right sized saucepan you can do the mixing therein - my 3 qt Great Jones Saucy saucepan worked well.
