Bourbon Peach Smash
Turns out I'm a bourbon gal - in mixed drinks at least. This is another summer drink from Deb. Don't be afraid of the vinegar - it adds depth and complexity to this refreshing drink.
Ingredients
Peach shrub:
- 1 large very ripe peach, pitted, very thinly sliced
- 1/2 cup sugar
- 1/2 cup water
- 1 to 2 tablespoons apple cider vinegar
- Pinch of salt
Assembly:
- A few macerated peach slices
- 3 to 4 fresh mint leaves
- Ice
- 2 tablespoons (1 ounce) syrup from peaches
- 3 tablespoons (1 1/2 ounces) bourbon
- Splash of chilled seltzer or ginger beer
Directions
- Prepare the peach shrub: Combine the peach slices, sugar, water and 1-2 tablespoons of vinegar in a lidded jar. Let steep for at least 3 hours in the fridge; it will keep up to a week.
- To assemble the drink: Use a fork to pull a few peach slices out of the jar and add to the bottom of a glass. Muddle with a few mint leaves (if you like mint).
- Add 2 tablespoons of the syrup from the peaches and 3 tablespoons of bourbon. Add ice cubes and stir.
- Add seltzer or ginger beer to taste.
