Chicken Laoka
This simple Malagasy chicken stew is delicious - thanks to our neighbors for introducing this to us!
Ingredients
- Chicken thighs, cut into large pieces
- Tomatoes, diced
- Onions, diced
- Olive oil
- Salt and pepper
- Use a ratio of about 2 lbs of chicken to 1-1.5 medium onions to 1 small to medium tomato. A big batch is about 4 lbs of chicken, 3 medium onions and 3 medium tomatoes.
Directions
- Salt the chicken, then brown on high heat in olive oil. Do it in batches if you have time, otherwise just throw it all in.
- Turn heat down to medium-medium low. Add finely diced onion and roughly diced tomatoes. Add a generous amount of olive oil.
- Cook on medium to medium-low heat. Lots of moisture will come out of the chicken, tomatoes and onion. The idea is to simmer the moisture off while stirring. Add oil for the right consistency. The onions and tomato basically dissolve over time. Salt and pepper to taste. This part takes 30 minutes to 1 hour.
