Cranberry Apple Shrub
Ingredients
- 3 medium apples, quartered (no need to peel or core)
- 1 cup cranberries
- 1 cup apple cider vinegar
- 1/2 cup turbinado sugar
Equipment
- non-reactive 4 cup vessel
- fine mesh strainer
Directions
- Shred the apples, either on a box grater or using a food processor.
- Meanwhile, add cranberries and apple cider vinegar to a blender and blend until pureed.
- Add shredded apples, cranberry vinegar mixture and sugar to a non-reactive container. Cover and leave in a cool countertop place for 1-2 days.
- Strain apple cranberry mixture, squeezing on solids to remove as much liquid as possible. Discard solids.
- Store liquid in a clean mason jar or glass bottle; shake well to combine.
Notes
- Shrub should keep well for up to 1 year.
- Unlike my store bought vinegars, it seems to take a lot more of this homemade shrub to make a balance I like: I used 6 tbsp in 12 oz San Pellegrino.
