Creamy Homemade Hot Chocolate Concentrate
I riffed on the original recipe so I could make one cup at a time. Use the best possible cocoa powder you can - I like the high fat cocoa powder from Penzey's.
Ingredients
- 1/2 cup white sugar, or to taste
- 1/3 cup unsweetened cocoa powder
- 1 pinch salt
- 1/3 cup boiling water
- 3/4 teaspoon vanilla extract
- 1/2 to 1 cup cream
- Milk, for serving
Directions
- In a small saucepan, combine the sugar, cocoa powder and salt. Whisk in the boiling water. Place over medium heat and bring to a simmer, stirring constantly to prevent scorching. Simmer for 2 minutes.
- Off heat, stir in the vanilla and the cream.
- To make hot cocoa, either:
- Return the pan to the stove and add 3 1/2 cups milk. Warm gently on low until it reaches the desired temp.
- Pour some of the concentrate into a mug and add milk to taste, then warm in the microwave.
- Warm the concentrate and drink it directly, because you are worth it. It’s highly reminiscent of rich, bitter European-style hot chocolate.
