Eric's Picadillo
Uncle Eric got this recipe from his grandmother, and graciously shared it with us!
Ingredients
- 1.25 lbs ground beef (or ground buffalo)
- 2 medium potatoes, cubed small
- 2 bell peppers, cubed small
- 1 cup frozen peas
- 8 oz beef broth (Better Than Bouillon with water works great)
- 8 oz tomato sauce
- 1/4 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/4 tsp cayenne pepper
- 2 tsp sugar
- 1 tsp garlic salt
- 1 tbsp minced garlic
- Flour tortillas, sour cream, cheese, avocado, and other toppings, for serving
Directions
- Put the ground meat in a large skillet and brown it.
- Add beef broth, tomato sauce, and potatoes. Bring to a boil and cook for 5 minutes covered, stirring occasionally. (If easier, you can add all ingredients at this step, but the peppers will be softer.)
- Add remaining ingredients and cook for another 5 minutes, covered.
- Remove cover and boil off remaining liquid, about 10 minutes.
- Serve warm over flour tortillas, topped with sour cream, cheese, avocado, and any other toppings you like.
