Liege Waffles (from Allrecipes)
While Smitten Kitchen's recipe is great, it does take a bit of planning. These come together the same morning as you want them (well, if you wake up with the sun like I do thanks to a very cheerful four-year-old) and are deeeeeeeelicous!
Ingredients
- 1 pkg (2 1/4 tsp) yeast
- 1.5 tbsp sugar
- 3/4 cups lukewarm milk (~100°F)
- 3 eggs
- 1 cup butter (2 sticks)
- 2 tsp vanilla extract
- 3 cups flour
- 1/2 tsp salt
- 1 1/2 cups pearl sugar
Directions
- Add the milk to a medium bowl. Mix in the sugar and the yeast. Let sit for 15 minutes to activate the yeast.
- Meanwhile, melt and cool the butter.
- Whisk the eggs, melted and cooled butter and vanilla into the yeast mixture.
- In a large bowl, stir together the flour and salt. Stir in the liquid ingredients and stir together until a wet dough forms. Let rise in a warm spot until doubled, about 30 minutes. Gently mix in the pearl sugar.
- Preheat your waffle iron for 10 minutes. Place a baseball sized ball of dough in the middle of the iron and cook until golden, roughly 2-3 minutes.
Notes
- I suspect the rising time is pretty fungible. I let mine rise at room temperature (~ 75°) for an hour and half, and it still turned out great.
- I added 1 cup of pearl sugar and it was great! The next time I tried the full 1 1/2 cups and felt like it was a bit too much.
- This dough is sooo buttery, you don’t need to oil or butter the waffle iron at all.
- Most recipes say that you can keep these warm in a 200° oven; I’ve never tried.
